Oysters Mosca Recipe

Baked Oysters

2 mains or 4 apps

4 TBS Butter
¼ Cup Olive Oil
1 Bunch Green Onions (Whole Stalk)
½ Bunch Italian Parsley
3 Toes of Garlic
2/3 Cup Italian Bread Crumbs
¼ Cup shredded Parmesan Cheese
½ tsp Salt
¼ tsp Black Pepper
¼ tsp Red Pepper
½ tsp dried Sweet Basil
½ tsp dried Oregano
Enough to cover 8 shucked oysters

In large skillet melt Butter and combine with Olive Oil over medium heat. Sauté Green Onions, Parsley and garlic until soft. Stir in Bread Crumbs, Cheese, Salt, Pepper, Cayenne and dry herbs. Mix well until cheese if fully melted. Mixture will be a bit dry.

Place Oysters on an oven safe baking dish. Spoon the mixture over the Oysters evenly. Bake for 15 Minutes at 425 degrees. Covering mixture should be browned slightly. Serve immediately.
